ohhhh it's a yummmmmmmmy one…this fun cookbook I'm cooking my way through…but honestly, what I've been learning is even better than just some cleverly and deliciously written recipes!! I'm learning patience, planning, and even better, how to cook!!!

 Because of our trip to New Orleans this past weekend, I didn't cook as much as I wanted to this last week. But I do have several Pioneer Woman's Cookbook expeditions to share with you today!!

This morning, I started baking some scones after seeing this on Ree's site:

Petite Vanilla Bean Scones

I laughed when she said " I figure until Starbucks steps up to the plate and builds their South Hay Meadow location, this is my only recourse."

So I didn't go to the grocery store yesterday since we are camping this weekend. (waiting til the last possible moment!!) So I didn't have the cool vanilla bean to scrape cool tasty stuff out of it! Instead, I took the Maple Pecan Scones recipe and cut it in the way that she says to for the petite scones. Then I left to take my 8yo baby to the doctor (spring virus…*sigh*), and I left the glaze to the very capable hands of Cora and Emma…They did fantastically. The scones were delicious, and I particularly liked the size!!!

I also particularly like the part in her recipe book that says…(paraphrased) now look at the mess you've made and cry a long hard cry!! ๐Ÿ™‚

Tonight, I created the long expected Comfort Meatballs. 

I have been procrastinating on this recipe, even though we all wanted to eat them!

I figured out why…you have to start them 2hours and 15 minutes before you are going to eat them. Who thinks ahead like that?? Well, I guess I do now!! ๐Ÿ™‚

Emma was climbing into the spice cabinet looking for tabasco for the sauce!!  She made the sauce herself!! a regular Ree herself!!

A couple things I learned…

make them smaller when starting out…

let them cook in the skillet a little longer before turning them…

put a little less sauce on the meatballs for the red sauce haters in the family!! LOL!!

 And true to form, I totally forgot to take an AFTER shot of the little suckers because I was too busy eating them!!! Mr Gorgeous loved them, as did all of the kids!! I would have liked them smaller, but you cook and learn, right?

BTW, I have leftovers, so I'll get my after shot and post it on Thursday!! yipeeeee!!

I hope to do the Stuffed Jalepeno Poppers while we are camping this weekend…and maybe something else. If not, we'll do something next Monday and Tuesday!!
